YAY Chop Suey!

Day Three, the title really speaks for its self. YAY Chop Suey! so yummy so delicious and well i eat it with rice so its healthy right? ...right? well i hope so lol. Tonight Sharon made chop suey for dinner and it was (as always) delicious! It is one of my favorite meals (and not just because i don't have to cook it myself), its got beef, pork, rice, water chestnuts, bean sprouts and those yummy little crispy noodles that apparently its next to impossible to eat just one of. I don't have the recipe for this one as i rarely catch her when she's putting the ingredients in. Mostly it is like the dish cooks its self! Magical! Just a pan bubbling fragrantly on the stove then POOF! a mouthwatering meal is there on the table before you! Its as good as coming home to a meal thats been bubbling away in the crockpot just waiting to surprise you with its yummyness!  I can hardly wait for the next magical meal, although truthfully they are all magical meals when shared with those you care about.

Honey Lime Weiner Dog

Day Two, things start out great, thaw the chicken for dinner, make sure we've got all the ingredients. Time to marinate the chicken slowly creeps up on me and there i am i get the marinade mixed and spill some on the dog. so then running around the house at about 30mph is a weiner dog with honey spots all over that smells of lime juice. Will he let us catch him? nooo that would be to easy. =) eventually the dog got cleaned...by himself and a quick rinse hehe. So dinner tonight was Honey Lime Chicken, Fluffy Rice, and some Roasted Asparagus. Delicious even when eating the asparagus on the go.

Honey Lime Marinade
1/4 cup lime juice
1/3 cup honey
1 Tbsp garlic or one clove
1tsp original mrs. dash
 I just marinade the chicken in it for at least 2 hours turning occasionally.

For the asparagus i used
1 Tbsp olive oil
1 tsp original mrs. dash
1 tsp garlic powder

Is it Spaghetti Sauce? or Poison?!

Day One, so far so good. Things seem to be starting well, i haven't been craving anything that i can't/won't eat. Dinner was wonderful, I tried a new recipe for Homemade Spaghetti Sauce tonight and it turned out well. Of course upon learning that it was a new recipe everyone was leery of trying it, i'm pretty sure they all think i'm trying to slowly kill them off (and maybe I was thinking of it but not till they win the Lotto). It was different in taste from what you get out of the colorful Jars in the store but, they all taste different from one another as it is. So here is the recipe if you would like to try it.

Spaghetti & Meat Sauce
makes 6 cups

1lb lean ground turkey
1 medium onion, chopped
28oz can tomatoes (we used whole but you can use any)
1 cup water
1 small tin tomato paste
1/2 tsp garlic powder or 2 cloves chopped garlic (i used a little more because i like extra garlic)
2 bay leaves (remove before serving)
1/2 tsp chili powder
1 tsp dried oregano
1 tsp dried basil
1/4 tsp paprika
1/8 tsp ground cinnamon
1/8 tsp ground cloves
1 cup chopped green pepper, celery, or mushrooms (Fresh mushrooms if you can instead of canned)

1. Brown the ground turkey. Drain off any fat that is left.
2. Add the rest of the ingredients.
3. Bring to a boil, then turn down the heat. Cover and simmer for about 1 hour. Stir every now and then so that the sauce doesn't stick. Add extra water if it gets to thick.
4. Serve and enjoy.
Note: I also included probably 1/4 cup of Parmesan cheese into the sauce probably 10 minutes before it was done. (In doing this i don't put the cheese on top.)

A Day, a Month, a Week, a Year at a Time

Attempting to change they way you eat, doesn't sound that hard, but then there you are going oooh i want a cheeseburger and fries and ketchup, and umm ice cream, with hot fudge, and nuts, and some whipped topping. Sounds good doesn't it? Yeah it does. As a matter of fact, NOW i'm hungry for that. But i'm trying something new *crosses fingers* and i'm hoping it will work. I'm working on cooking healthier and not using as many box mixes, and things like that.  I love to cook, and I probably love to cook because I love to eat. I can eat when i'm happy, sad, mad, depressed, joyful, giddy, no matter what food is there and i'll probably be willing even happy to eat it, and i'll eat most foods, especially if there is chocolate involved! So one day at a time, maybe even a week at a time or more i'm slowly working on eating better. And hopefully this blog will keep me honest about it, so that i don't sneak to many unhealthy little foods into my day. I will also post the recipes i use if they turn out well, maybe even if they don't so you can help me figure out what went wrong.
